Jalapeno poppers

It’s the weekend… and what better way to kick it off than happy hour with friends? But before you hit that trendy new spot or your local dive, consider hosting everyone at your place. Believe me, you can do a MUCH better job.

All you need is a signature drink (a cucumber-infused martini, for instance), and a satisfying snack to serve your guests.

Jalapeno poppers are among my all-time favorites for impromptu get-togethers. Not only are they incredibly simple to fix, they’re so decadent no one will have any idea they’re actually good for you.

Here’s what you need:

  • 6 large fresh jalapenos. (Be sure to choose carefully when you’re shopping…you don’t want to grab the wrong peppers! Jalapenos are a good middle-of-the-road option. Not too fiery, not too sweet–just plain tasty.)
  • 4 ounces cream cheese
  • 4 slices bacon, uncooked

Core the jalapenos, and remove the seeds (you should probably wear plastic gloves for this step). Stuff the jalapeno with cream cheese, then wrap the pepper in bacon, and secure with a wet toothpick. Bake in a preheated 375-degree oven for 20 to 25 minutes until the bacon is crisp. Serve hot from the oven.

This recipe can easily be doubled or tripled, to match the size of your crowd.
