4 green onions, chopped into a fine dice
12 ounces fresh crabmeat
1 teaspoon grated lemon rind

Steam the asparagus until it is crisp-tender, about 3 to 4 minutes. Remove from water, place in an ice bath to stop the cooking process, and drain. Melt the butter in a small saucepan over low heat. In a large skillet, heat the oil over medium-high heat, and crack the eggs into the skillet. Cook through, stirring in the salt and pepper until the whites are no longer runny, about 5 minutes. Divide asparagus among four plates and top with prosciutto, butter and slices of cheese.

Dinner: Creole Rubbed Tuna Steak

Yield: 4 servings

4 (8-ounce) tuna fillets
1 tablespoon curry powder
4 tablespoons macadamia nut oil
2 tablespoons minced fresh garlic
1 Scotch bonnet pepper, stemmed, seeded and minced
1 teaspoon grated fresh ginger
Sea salt
Freshly ground coarse black pepper
Arugula leaves (raw)

Combine all the ingredients except arugula in a stainless steel bowl., and mix together until the tuna steaks are well coated. Refrigerate for 2 hours. On a preheated grill over high heat, sear the tuna on each side for 2 minutes. This will leave the tuna seared on the outside but raw on the inside. Serve over a bed of arugula leaves.
